What's actually moving under the house

That's a very different problem from the deep Blackland clay that plagues San Antonio and Austin. There isn't much soil to swell here, but what little there is behaves unevenly, because the weathered limestone beneath it is honeycombed with fractures.
Those fractures decide where water goes. Rain drains fast through a fracture pocket under one corner of your foundation and barely moves under the solid rock holding up the corner across the room. So one part of the slab wets and dries on its own schedule while the rest stays put. The slab doesn't drop uniformly, it twists. That's why the damage shows up diagonally, with opposite corners racking in opposite directions.
Reading that pattern is the whole game. The direction a crack opens and the corner a door binds in tell our engineers which part of the structure has rotated relative to which, and that's what shapes the repair plan long before anyone picks up a tool.
Why we drive steel to refusal instead of to a number
With bedrock this shallow and this irregular, a fixed target depth is the wrong spec. One pier might find competent rock at four feet and the next at eight, simply because the limestone surface rolls.
